

I ate this on a lazy Sunday. I had thought of going out for brunch but I'd been going out so often that I just needed to cut down on the spending! In my head 'brunch' is always a big deal. In fact, often I look at brunch menus and cringe because I know that I'd be full just eating 1/3 of what they offer! 'Brunch' also makes me think of sweet + salty. Pancakes and eggs, or something like that. So I decided to make something big and fancy at home! Not pictured is of course the gallon of coffee I drank.
This is roughly 150 kcal per plate.
The fruit salad was 1/3 of a medium apple, 1/3 of a medium banana, a fig, 1/2 a nectarine, 2 teaspoons of crushed pistachio, 1/2 teaspoon of vanilla extract, 1/2 teaspoon of cinnamon, and a sprinkle of bee pollen.
The other was composed of 2 egg whites, 2 tablespoons of cottage cheese, a few slices of zucchini and some caramelized onions, basil, 2 teaspoons of flaxseeds and 4 cherry tomatoes.
Everything was delicious and I was more than full by the end! I'd say that with this as breakfast and 5 to 10 almonds as a mid-morning snack, I could make it to lunch no problem. With coffee. Always coffee.
